Executive chef Inake honed his skills in Japanese cuisine at a restaurant in Osaka and acquired his techniques as a chef.

After this, he was present at the opening of many hotels and ryokan tenants, and achieved success.
Inake is not just a chef, but is also proficient in the creation of dining spaces where guests are received.
Inake bases his foundations in traditional Japanese cuisine, but he has a very flexible attitude towards his cuisine. He is not bound by preconceptions and realizes new flavors by using ingredients and cooking methods from Western cuisine. Inake's individual style is described as "Taking half a step forward" and always fulfills diners' expectations.
Inake says that he often served dishes to customers while facing them at the counter. The first thing on his mind is to value the luxury of the scene, where people sit down for meals with family and people who are important to them. Continuing to explore what is needed for this, and the flexibility to use this for the utmost satisfaction of his customers, are what he takes pride in.
